Don’t be startled if I ask you to eat cupcakes to lose weight. A healthy dessert is not an oxymoron anymore. Thanks to the Fitness Bakery Mumbai which is yet to celebrate it’s first birthday but is already gathering a lot of fan following. It has come out with healthy options for the sweet tooth. It is receiving order requests from Delhi, Bangalore and many other cities.

The proprietor quips, “I love my workouts and hate ‘feeling’ fat. Unfortunately, I have quite the sweet tooth. I mean, I can fight you over a piece of chocolate. I’ve struggled with staying away from cookies and desserts for a long time. And then I found a way to include them in my diet – without feeling guilty. I started baking with protein powder (mainly whey since that’s what is easily available in India), and moved on to new ways of baking without adding butter, sugar, maida and a lot of the other greasy, high sugar stuff that goes into baked things. Whaaaaaaaaaaat! Yes! It can be done. Takes a little getting used to the flavours but once you do, you really won’t miss the other stuff. Now I eat everything from chocolate mint cookies, red velvet cake and lip-smacking protein bars when I feel peckish. So much so, that I don’t even feel the need for a cheat day anymore!”

For many of us, it feels like a dream come true. We all have wished for something sweet without having to go on a guilt trip. Isn’t it? Let’s find out more about Fitness Bakery and then gorge on the healthy pancakes Fitness Bakery style!(recipe shared).

MG: When was Fitness Bakery started? How was the concept developed? How did you come up with the idea?

FB: I started FB on 19th August 2013 but it was launched officially on 7th October 2013. The concept was just developed by chance. My husband and I are heavily into fitness and healthy eating. So, we both didn’t have many snacking options, especially when we craved something sweet.

I started trying to bake cookies and cakes at home using Whey and fruits and gluten-free flours. This was about 1.5 years ago. I got better with time. A few months back my family really encouraged me to start baking for others who, like my husband and me, were looking for healthier options. Of course, there is a huge gap in the market for such products.

Another thing was the problems with Wheat and Gluten – I wanted to eliminate wheat and gluten flours from my baking. I believe the amount of wheat we eat on a daily basis is not healthy at all. So, I tried different gluten-free flours and started getting success.

MG: This is brilliant! There are many who would be interested in such products. Is it made to order or people can visit a store? Do you plan to expand it into a store in future?

FB: This is entirely made-to-order. I am doing this out of home currently. Right now there are no plans for a store. Since each and every order is customised as per diet requirement, it is difficult to create a single recipe to sell in a store.

MG: Now that is a bit disheartening for people who would want to pick it up from shelf. Do you deliver throughout India?

FB: I don’t deliver currently. It is on order and pick-up basis. At the moment I am only present in Mumbai. However, there is tremendous interest from Delhi and Bangalore and hopefully soon I will be starting delivery there.

MG: I am sure the health enthusiasts are excited and will be waiting when you would start taking orders from other cities as well.  This concept is popular abroad but how are the Indians reciprocating given their Indian palette?

FB: The response has been pretty good. I think more and more Indians are becoming conscious of their eating habits. With a growing number of Indians suffering from diseases such as Diabetes, CVD, Hypertension, etc., I think they are beginning to change their lifestyle. Most urban Indians today want to live healthy. It is easier to find healthy salads and meals but very hard to find something healthy to satisfy your sweet tooth. The truth is that once you start eating healthy sweets, which have unprocessed sugars, your craving for extremely sweet things will reduce significantly.

MG: I agree. Indians are also recognizing the benefits of healthy eating and lifestyle.  Please tell us the kind of ingredients you use to bake these desserts.

FB: Usually it depends entirely on the customer preference. I give them choices. My menu is of two kinds – with grain and grain-free.

For the menu using grains, I use different flours. My base flour is always Sorghum (Jowar). To that I add other flours such as – brown rice flour, oat flour, cornflour.

A lot of people ask me to add Whey. So, most of my products have Whey protein in them.

Sugars – I give options of Stevia, Splenda, Organic Jaggery, Honey and Coconut Sugar

Fats – Again, the options are Ghee, Olive oil and Coconut Oil

In my grain-free range, the grains are replaced with almond flour and coconut flour.

MG: Would you like to share any recipe with our readers?

FB: Please try our Whey protein Pancake recepie for an amazing breakfast. Yes! You don’t have to eat a boring oats and bread breakfast.  These delicious, stacked pancakes are super filling and extremely low in carbs. It’s like an explosion of yumminess in your mouth.

For the Pancake:

2 egg whites (or one whole egg)

1/2 scoop of any flavoured Whey protein

1/4th cup of cottage cheese or sour cream or full cream

1/2 banana

1tbsp desiccated coconut

1tbsp finely ground nuts (almonds or walnuts)

Just mix all the ingredients in a blender for about 3 minutes or till the mixture is smooth. Heat a non-stick pan and sprinkle a little olive oil/butter/coconut oil/ghee. Measure batter depending on how big you want your pancakes and pour it on the hot pan. Let it cook on medium heat till tiny bubbles start appearing. Flip over and cook for 30sec. Remove from heat and serve with this –

Pancake Topping:

1/2 scoop whey

1tbsp peanut butter

Coconut milk or cow milk to bind

1/2 banana

Mix everything except the banana. The mixture will be thick like sauce. Pour it over the pancakes or keep separate.

Cut the stack of pancakes, dip into mixture, add a piece of banana and go straight into delicious land.

Next time you crave something sweet, you know where you will get your guilt free, tasty and healthy treat.
