Radhieka has a sweet tooth

Radhieka Pandya, owner of the Fitness Bakery said that she loves her workouts and doesn’t like to put on weight. Unfortunately, she has a sweet tooth and cannot resist chocolates, cookies and desserts. Therefore, she found a way to include them in her diet by baking herself with healthier options. When she started a decade ago, baking with almond flour or coconut flour wasn’t main stream. When she started, she started baking with protein powder (mainly whey, since it was easily available in India).

Gradually, she experimented by baking without adding butter, sugar, maida, etc. Though, initially matching the flavours was a challenge. But as she got better with baking, she started experimenting more. She said, “I eat everything from chocolate mint cookies, red velvet cake and lip-smacking protein bars. I don’t even feel the need for a cheat day anymore!”

When and how Fitness Bakery Mumbai started

Fitness Bakery Mumbai was started in August 2013. It was officially launched in October 2013. The concept was developed by chance as Mustafa and Radhieka, both are into fitness and healthy eating. They both felt that there was a gap in the market when it came to healthy eating. They didn’t have much options when they craved something sweet. And hence the idea of a fitness bakery was born.

She said, “I started trying to bake cookies and cakes at home using whey and fruits and gluten-free flours. After a year’s practice, I got better with time. My family really encouraged me to start baking for others who, like my husband and me, were looking for healthier options.” She wanted to eliminate wheat and gluten from the baking process. As per her, Indian’s tend to eat unhealthy amounts of wheat in their daily diet.

As more and more Indians become conscious of their eating habits, they are vary of eating unhealthy and sugary food. This is where Fitness Bakery Mumbai was able to bridge the gap. The demand was definitely there, but the means were next to none a decade ago.

It depends entirely on the customer preference. Customers are given a choice of with grain and grain free menu.

For the menu using grains, I use different flours. My base flour is always Sorghum (Jowar). To that I add other flours such as – brown rice flour, oat flour, cornflour, said Radhieka.

A lot of people ask me to add whey. So, most of my products have whey protein in them.

Sugars – I give options of stevia, splenda, organic jaggery, honey and coconut sugar.

Fats – Again, the options are ghee, olive oil and coconut oil.

In my grain-free range, the grains are replaced with almond flour and coconut flour.

Exclusive whey protein pancake recipe from the Fitness Bakery Mumbai

Please try our Whey protein Pancake recipe for an amazing breakfast. These delicious, stacked pancakes are super filling and extremely low in carbs. It’s like an explosion of yumminess in your mouth.

For the Pancake:

2 egg whites (or one whole egg)

1/2 scoop of any flavoured Whey protein

1/4th cup of cottage cheese or sour cream or full cream

1/2 banana

1tbsp desiccated coconut

1tbsp finely ground nuts (almonds or walnuts)

Just mix all the ingredients in a blender for about 3 minutes or till the mixture is smooth. Heat a non-stick pan and sprinkle a little olive oil/butter/coconut oil/ghee. Measure batter depending on how big you want your pancakes and pour it on the hot pan. Let it cook on medium heat till tiny bubbles start appearing. Flip over and cook for 30sec. Remove from heat and serve with this –

Pancake Topping:

1/2 scoop whey

1tbsp peanut butter

Coconut milk or cow milk to bind

1/2 banana

Mix everything except the banana. The mixture will be thick like sauce. Pour it over the pancakes or keep separate.

Cut the stack of pancakes, dip into mixture, add a piece of banana and go straight into delicious land.
